UCF Keeps On Delivering!

I neglected to mention that I got an envelope in the mail from (By God) West Virginia the other day. I opened it and found a card from Michelle. I have to admit I was having trouble making sense of it for a minute. The card described how she'd been reading a magazine on her recent trip, saw an article and thought of me.

The article contained a recipe for Pop-open Clams with Horseradish Tobasco Sauce. I only like clams minced in a white sauce for linguini. Why would Michelle think of me from looking at that. I went back to the card. The clue I hadn't internalized was "no cage seems to be required".

Look at the magazine page more closely. The second recipe (the one without the lovely photo), is for Grilled Mini Meat Loaves. Ahhhh! The recipe looks good and will be tried out later this week.

Thanks Michelle. And I think Janiece owes us a new line on the hairball chart! :D

I'll cross my fingers that it tastes as good as you hope.

And it makes it all the better that you initially thought I was completely insane for sending you a clam recipe.

As far as the insane part...I'd expect no less. And I think I've mentioned that I'm incapable of following a recipe without monkeying with it a bit. I'm pretty sure all be using mozzarella instead of the ricotta they suggest.

We would have ignored the type if you hadn't pointed it out.

And I'm not sure about substituting mozz for ricotta. They have very different moisture contents, and I would think you would need to compensate for the lost moisture if you use mozzarella.

Assuming it's in and not on. I mean, it's not like I *read* the recipe or anything, seeing as how it involved dead cows and everything.

Are you willing to share the recipe? My own Smart Man loves him some meatloaf...and it would be nice to surprise him. (personally i don't eat the stuff..but you never know..this could be the one that wins me over)
